Can Doxie scan in B&W or grayscale?

Effectively, yes.

The scanner itself always captures pages in full color -- then from the Doxie app, you can save a scan in grayscale or B&W.

There isn't a disadvantage to scanning this way -- Doxie scans at its maximum speed in full color.
